multiple independent forums

Is there a way to have the forums completely separate from each other? meaning. I don't want a parent forum, nor do I want a user to be able to go from one forum to the other (unless they know the url of course, then I can't do anything).

That's sort of a vague question, but If I'm reading it right you're looking for completely isolated forums, separated from each other. If that's the case, you will need different domain names for each forum, and a separate license for each domain.

sorry if it was vague. I was hoping to run them under the same domain, but keep them completely separate...I guess it's not possible.

Sure it is. Point them to forumA.thisdomain.com and forumB.thisdomain.com, but you will need two licenses to do it, or as many licenses as needed for however many individual forums you are going to want.
